Taste is what happens when a substance in the mouth chemically interacts with taste receptor cells, which are housed in taste buds mostly on the tongue. This sensory system, known as the gustatory system, works together with smell and trigeminal nerve stimulation—which registers texture, pain, and temperature—to create the overall flavor of food.
The tongue is covered in tiny bumps called papillae, visible without a microscope. Inside most papillae are hundreds of taste buds, except for filiform papillae, which have none. Humans have between 2,000 and 5,000 taste buds on the back and front of the tongue, as well as on the roof, sides, and back of the mouth, and in the throat. Each taste bud contains 50 to 100 taste receptor cells. The gustatory cortex in the brain is responsible for perceiving taste.
Taste receptors detect five basic tastes: sweetness, sourness, saltiness, bitterness, and savoriness (also called umami). Scientific experiments confirm these five are distinct. Sweetness, savoriness, and bitterness are triggered when molecules bind to G protein-coupled receptors on taste bud cell membranes. Saltiness and sourness are perceived when alkali metals or hydrogen ions interact with taste buds, respectively.
These basic tastes are only part of what gives food its sensation. Other factors include smell (detected by the olfactory epithelium in the nose), texture (sensed by mechanoreceptors and muscle nerves), temperature, and sensations like the coolness of menthol or the heat of pungency (chemesthesis). The gustatory system helps animals tell safe from harmful food and gauge nutritional value. Sweetness signals energy-rich foods, bitterness warns of poisons, and each basic taste generally brings either caution or craving depending on its effect on the body.
As people age, taste perception fades: tongue papillae are lost, and saliva production slows. Humans can also experience distorted tastes (dysgeusia). Not all mammals share the same tastes—some rodents can detect starch (humans cannot), cats cannot taste sweetness, and several carnivores like hyenas, dolphins, and sea lions have lost the ability to sense up to four of the ancestral five basic tastes.
